Spinach tagliatelle


  • salt
  • oil
  • water
  • parmesan
  • 7 g butter
  • 1 teaspoon of ginger powder
  • 1 teaspoon of curry powder
  • 150 g spelt flour
  • 130 g barley flour
  • 20 g spinach

For this dish, we start off by making ourself some tagliatelle. So pour the spinach in the mixer with some water, oil and salt, and let them mix together and become liquid. Then pour this mixture into a bowl in which you have already put the spelt flour. Start to knead the dough, by adding from time to time the barley flour. When you obtain a solid and compact dough, let it rest for at least 30 minutes. After this time, you can stretch out the dough with a rolling pin. Then cut the dough in long strips, so to obtain tagliatelle.

Now, pour some water in a pot and let it boil. Add then a pinch of salt and some tagliatelle. In the meanwhile, put in a pan some butter, ginger and curry powder, and let all the ingridients blend. When the pasta is ready, drain it and pour it in the pan. Stir all the ingridients and some parmesan. Your dish will be ready in a couple of minutes. Put some pasta in a dish and add on top of it some parmesan if you like it.
