pork tenderloin with pistachio


  • pork tenderloin
  • finely chopped pistachio
  • thyme
  • rosemary
  • laurel
  • sage
  • juniper berries
  • wild fennel
  • 2 oranges
  • 2- 3 glasses white wine
  • oil
  • salt
  • black pepper

Marinate the pork tenderloin with a mix composed of some water and all the herbs (wild fennel, laurel, junuiper berries, thyme, sage, rosemary).Let the tenderloin rest for a few hours. Then, pick the tenderloin and add salt and pepper. Now you can  make the tenderloin adhere to the finely chopped pistacchio. Put the tenderloin in a pan where you have previously poured some oil. Let the tenderloin fry. When the tenderloin is tender, pour some white wine. Let the tenderloin cook for other 5 minutes, and add some orange juice. Now the dish is ready to be served.
